We are constantly looking ahead at the news and trends that will be influencing the bakery sector.  The past two years have seen lots of change in the sector and for 2022 there will be specific areas that bakers should be focusing on that will affect all their customers.

For 2022 trends across the sector there are two main areas to focus on:

1 - Nutritionally beneficial vegan/plant-based products becoming even more widespread as consumers still want to treat themselves but also have an eye on sustainability concerns post pandemic.

2 - Bold flavours and textures will be high on the agenda across all products.  This will see classic cakes and traditional bakes coming to the fore, with bakers ensuring that they are up to date and ’Insta Worthy’.  Consumers are looking for additional benefits when purchasing products and outstanding taste and texture fall into this. It gives bakers permission to create some exciting products with celebration cake portion sizes for the family making a return in 2022.

Additional trends include extending a product’s reach.  A great example of this is doughnut hybrid mash ups using various mixes/products such as brownies in doughnut format.  These are set to be popular with bakers able to create individual, bespoke versions to meet their audience tastes and showcase in occasions such as birthdays, seasonal twists and National Doughnut Week.  Lemon will be a hugely popular flavour as well as sweet and sour and, as always, the UK consumer loves chocolate so expect to see it paired with lemon and bolder flavours.  Purchasing for On The Go consumption will increase even further, and The Queen’s Platinum Jubilee will come into play with traditional cake formats bake offs and bunting for street and family parties across the extended May Bank holiday. The Commonwealth Games taking place in Birmingham in July and August will be celebrated with celebration doughnuts and other fun recipes and cakes. In terms of savoury products and breads Tiger paste will be in the limelight even more and it meets the bold flavour/texture trends.
